Cooking Courses Sydney

Hello, IAM in Sydney and I want to open a cafe, I was looking for a cooking school, but I found the course of commercial cooking @ TAFE is too long, I can not commit to much time, or any other cooking school in Sydney i can choose?

it will be a long answer. sorry in advance. I seriously thought about culinary school and checked a dozen here in the States. I got lucky and got a job as a cook in a mobile preparation of four stars, three stars Michelena, and the owner has clearly indicated that he could teach me more in three months that I I have learned in the program a leader in two years. I do not know if it's true, but I can tell you this kitchen ... is work, not art. There is no creativity in the kitchen as I had hoped. You do the same thing the same way, again and again, every day. The kitcken commercial is the last place a person should be creative. I learned a lot about the quality of food, seasoning and skill with a knife and makes me a better reception in my own house. But it is not worth the expense of a culinary degree. On the other hand, you can not become a chef at any institution appointed without the diploma. Cooking in a restaurant is blind, ungrateful, repetitive work that pays badly.
